Eaux de Vie
Eau de Vie is a French expression meaning “water of life”. Eau de Vie is brandy made by crushing and fermenting fruit, then distilling that fermented fruit mash. It is generally colorless, bone-dry, and around 80 proof. Eau de vie is served as a digestif, to aid in digestion at the end of the meal.
The heart of Clear Creek’s product line are the eaux de vie, all made according to the most old-fashioned techniques. We use only pure whole Pacific Northwest grown fruit. We crush and ferment this fruit, and then distill the fermented mash in our small German-made pot stills.
